We were going to have company and wanted to make lasagna. On a cooking show, we had seen the chef use a layer of sliced up meatballs in his lasagna. So, we gave it a whirl. We recently found a little place where we can get ground pork. Joe mixed some ground pork and some ground beef with lots of spices. We made the meatballs a day ahead. After we tried one, we were not sure if they would make it into the lasagna the next day. They were quite tasty!
While the sauce was simmering, we worked on the noodles. Making your own noodles is not hard; it just takes time.

We also made ricotta cheese a couple days early. We have had cheese-making supplies for a while but had not used them yet. Ricotta requires whey. So, we had to try making a different cheese first to have some whey. We tried mozzarella, but it did not turn out quite right. (We were encouraged when we read that most people fail at their first mozzarella-making attempt.) The ricotta turned out great though.
